I am not sure how I would survive without eggs. Obviously I bake a lot, but I also rely on eggs for a lot of my meals. A fried egg and butter sauteed kale is one my favorite quick lunches. Baked eggs with toast or a chive and cheese omelet are great meals when I am in a hurry. Frittata however is one of my favorite meals with eggs, as it can be made in advance and eaten later.  This particular recipes works great for brunch, lunch or supper, and is delicious hot or cold. It’s got lots of sweet caramelized onions, waxy potatoes, fresh herbs, salty cheese, and crispy prosciutto. It’s so good, and so simple to make. I felt like it was time for a change – a spring clean, and a new look for Stasty.  I got this beautiful blog theme from Solo Pine -I just love the clean lines, and also the fact that it’s “made with love in Seattle”. I’ve gotten rid of most of the pesky ads, to make room for bigger and brighter pictures. Cauliflower is now trendier than kale. I am kind of pleased by this. Much as I like kale, I won’t miss that awful ‘cabbagey’ smell you get with cooked kale. I feel like every restaurant I walked into last year smelled of kale. It’s kind of how I imagined Ireland smelled in the 1940’s, when all they had was kale and potatoes as vegetables.
