Our new kitchen is almost ready, and I am so excited to start cooking again. In the three weeks we were without a kitchen, it was actually the simple things I missed most – fresh coffee, the smell of home-made bread, and being able to make an omelet! Life is currently a little chaotic. We are getting our kitchen remodeled, and without a kitchen to play in, I am feeling very lost. Plus, living on takeout food is expensive, boring, and downright unhealthy. I am counting the days until I get to cook and prepare my own food again. We also just got a new puppy, which is adding slightly to the chaos. That said, he is really adorable and alleviates any chaotic stress too. So, this week’s recipe is a super simple dressing. Dutch Baby or a German pancake is just like a giant Yorkshire pudding baked in a skillet. It’s made with pancake batter, and puffs up and get wonderfully crisp when baked in a hot oven. It doesn’t take long to make, and is best eaten, piping hot straight from the oven (you won’t be able to stop yourself anyway, just be careful and eat it with copious amounts of vanilla ice-cream). I am not sure how I would survive without eggs. Obviously I bake a lot, but I also rely on eggs for a lot of my meals. A fried egg and butter sauteed kale is one my favorite quick lunches. Baked eggs with toast or a chive and cheese omelet are great meals when I am in a hurry. Frittata however is one of my favorite meals with eggs, as it can be made in advance and eaten later.  This particular recipes works great for brunch, lunch or supper, and is delicious hot or cold. It’s got lots of sweet caramelized onions, waxy potatoes, fresh herbs, salty cheese, and crispy prosciutto. It’s so good, and so simple to make. I felt like it was time for a change – a spring clean, and a new look for Stasty.  I got this beautiful blog theme from Solo Pine -I just love the clean lines, and also the fact that it’s “made with love in Seattle”. I’ve gotten rid of most of the pesky ads, to make room for bigger and brighter pictures.
