Courgette Chips with Garlic Mayonnaise

As a food blogger, I am always interested to see what people are cooking. Vegetable crisps and fritters seem to be really popular online, at the moment. Courgettes have been featuring alot as they are plentiful and in season right now. Cheese Canapes

This dish is kind of like an alternative cheese plate, a cross between cheese tapas, and cheese and crackers. As it’s summer, there is a huge array of delicious ripe fruit out there, so I decided to pair (pear!) them with some of my favourite summer cheese. This cheese plate looks so impressive, but only takes minutes to make and works great as canapés with a glass of sparkling wine or champagne. The cool thing about this dish is that you can mix and match as you like. I sliced up some fruit, a selection of herbs, and some cheese. Then I just tasted and figured out what worked well together. Sweet Potato Scones with Beetroot Jam and Crème Fraiche

We recently had very enjoyable afternoon tea in Reid’s hotel in Madeira. The tearooms are ideally situated on a balcony, overlooking a tropical garden and the glistening blue sea. The whole experience was idyllic and felt a little like walking back in time, to an age where afternoon tea was all the go. Our table was covered with pristine starched linens and we were presented with shiny silver teapots, fine bone china cups and tiered plates of delights. We nibbled on delicate prawn sandwiches, pillow soft scones with clotted cream, and a whole array of sweet pastries and cakes. It was such a relaxing afternoon and we savoured every bite. Dillisk, Gubeen Cheese and Sesame Scones

For many people St.Patrick’s Day is a day of drinking, gaudy parades, lurid green leprechauns and shamrock shakes. There are a lot of great things about Ireland and very little of these are ever celebrated on our national feast day. Last weekend I had the opportunity to spend some time in a beautiful unspoiled part of Ireland, on Inchydoney Island in West Cork. Po’boy

When I came home from the bread making course, I was literally laden down with homemade fresh baguettes. I wanted to make something special with them, as I had put so much work into making them. I also had a pot of homemade mustard mayonnaise in the fridge. So it was clear, it would have to be some sort of a sandwich…some sort of gourmet sandwich. The first thing that came to mind was a po’boy, which is funny as a po’boy is considered a poor man’s (poor boy) sandwich, originally created in Louisiana. But for me, the po’boy is one of the scrummiest, most wonderful sandwiches you can get. It is traditionally comprised of French baguette, mayonnaise, deep fried shrimp/ oysters and lettuce.
