Raspberry Mule

I’m not the biggest cocktail fan, as I find most cocktails too sweet, but I love a raspberry mule as it’s refreshingly tart. You can make a raspberry mule extra icy with frozen raspberries. You can also make it extra healthy by omitting the vodka!

Here’s how:

 – 12 raspberries
 – 50ml vodka
 – 25ml fresh lime juice
 – 1 tsp caster sugar
 –  A few ice cubes
 –  Ginger ale

Muddle the raspberries with the lime juice and sugar in a highball glass.  Add the vodka, ice and ginger ale.  Top with a sprig of mint and serve.
