Baked Apples with Cranberry, Orange and Nuts

November 1, 2011

The winter chill has truly set in. Cold frosty mornings and short dark evenings are the order of the day. This baked apple dessert is a great winter warmer. It’s quick and easy to make, and all those aromatic spices will give your kitchen a lovely Christmasy aroma. I cannot believe I just said the word Christmas and it’s only November! This is a real feel good dessert however, cheap and easy to make, and dare I say it, healthy. If you want to make it a bit more decadent and bold, serve with a nice home-made custard or vanilla ice-cream. Continue Reading…

Favourite Fish Pie

October 24, 2011

When I have foreign friends over for supper, I always want to show them what’s best about Ireland. We have such amazing natural produce that it’s very easy to create a tasty dish out of just a few ingredients. This simple fish pie really shows off the wonderful food we have readily available in Ireland. Continue Reading…

Breakfast for Dessert…Part 2

October 11, 2011

Thanks so much for all your lovely comments and great guesses. Today I’ll reveal how I made that golden sausage, that gooey egg, sunny side up and that pesky streaky bacon. The egg and sausage were fine, but that streaky bacon had me stumped. I was almost going to leave it out altogether. When I finally came up with the brandy snap bacon, I knew I had it. Though not an absolute likeness (due to the holes!) it looked realistic enough for me, the texture was good and the taste was great.

Breakfast for Dessert…Part 1

October 4, 2011

It’s breakfast Jim…. but not as we know at. Every item on this plate is in fact dessert. It’s the breakfast fry-up that is even suitable for vegetarians. However, I think it should be served with a sweet dessert wine rather than a builder’s tea. After the success of the Rubik’s cake, I really wanted another project and the breakfast fry came to me one day, as it’s so iconic and it’s something that everyone instantly recognises. This dish took a few weeks to figure out, a lot of trial and error with a few delicious disasters along the way. Continue Reading…

Kedgeree Samosas

September 27, 2011

Samosas are essentially crispy triangular pastry parcels of savoury food and are originally Asian in origin. I love the idea of samosas; it’s the perfect portable lunch, less messy than a sandwich and a lighter alternative to the pie. Samosas are little pockets full of flavour and spice and are served with complimentary chutney. I recently had this strange idea that kedgeree would work really well as samosas. I couldn’t find a recipe so I just formulated my own. So this dish is one hundred percent S’tasty original. It tastes delicious and you won’t find it anywhere else 🙂

Arctic Roll Revival

September 20, 2011

The Arctic Roll is back. This cake and ice-cream concoction was the Ben and Jerry’s treat of the 80’s. It prempted the Vienetta and was that little bit of luxury when times were tight. It was the Sunday best and had a similar mystique to baked alaska. At the height of its popularity, more than twenty five miles of Arctic Rolls were sold every month in the UK alone. The original arctic roll is essentially vanilla ice cream wrapped in a thin layer of sponge cake to form a roll and bound together with a layer of sweet sauce.
