Summer Salmon Salad

August 26, 2015

Nicoise-3

We are really lucky to have so much wild salmon here in the Pacific Northwest, with exotic names like Chinook, Sockeye, and Coho. When I arrived here I was so excited to try them all, but when I first sampled some Sockeye salmon, I didn’t really like it. It tasted way ‘fishier’ to the Atlantic salmon I was used to, and I wasn’t sure it was for me. Continue Reading…

Dessert

Chocolate Pavlova with Cherries and Orange

July 13, 2015

ChocPavlova

Pavlova is one of those desserts that can be whipped up in minutes, yet always tastes like you slaved over it all day. I love them for that very reason, plus eggs are available year round and you can vary the topping with fresh seasonal fruits. I feel like this summer is flying by so speedy desserts like this are just what I need. Continue Reading…

DutchBaby-6

Dutch Baby or a German pancake is just like a giant Yorkshire pudding baked in a skillet. It’s made with pancake batter, and puffs up and get wonderfully crisp when baked in a hot oven. It doesn’t take long to make, and is best eaten, piping hot straight from the oven (you won’t be able to stop yourself anyway, just be careful and eat it with copious amounts of vanilla ice-cream). Brunch

Cheese, Herb, Prosciutto Frittata

April 20, 2015

Fritatta4

I am not sure how I would survive without eggs. Obviously I bake a lot, but I also rely on eggs for a lot of my meals. A fried egg and butter sauteed kale is one my favorite quick lunches. Baked eggs with toast or a chive and cheese omelet are great meals when I am in a hurry. Frittata however is one of my favorite meals with eggs, as it can be made in advance and eaten later.  This particular recipes works great for brunch, lunch or supper, and is delicious hot or cold. It’s got lots of sweet caramelized onions, waxy potatoes, fresh herbs, salty cheese, and crispy prosciutto. It’s so good, and so simple to make. So, if you are stuck for ideas, and want something incredibly tasty and easy to make, you can’t go wrong with this recipe. Continue Reading…

Cake

Irish Coffee Swiss Roll

March 13, 2015

Irish Coffee Swiss Roll

When I was young my sister Zoe used to make a great coffee cake. I used to think coffee cake was incredibly sophisticated as a child. Generally in Ireland coffee cakes were not made with coffee. Just absorb that sentence for a second. You have to remember it was the eighties and coffee hadn’t quite taken off. Continue Reading…

Eggs Croustade stasty.com

One my favorite tea time suppers is a simple boiled egg and toasted soldiers. It’s easy, tasty, and such comfort food.  It’s also nostalgic, and reminds me of being a child, enjoying the wonder of small toasted soldiers. Continue Reading…
