As I look out at the cobalt blue sky and our burnt yellowed lawn I find it hard to believe it’s still early summer. We have had a crazy hot month here in Seattle, and it already feels like the middle of August. It’s been a constant battle to water all out veggies but I am not complaining. It’s been balmy and so wonderful to be able to dine al fresco in the sunshine every day. Mint, Lime and Raspberry Sparklers

If I had to pick a favorite herb, it would have to be mint. Mint is really versatile and a great addition to savory and sweet dishes. I use mint all the time – I add it to yogurt to have with curries, I make fresh mint ice-cream with it and I also use it to garnish nearly every cake I make.  This week, as the weather has been heating up, I used it to make simple mint syrup. There are only one or two brands of gin that I really like, I also like a lot of ice and there has to be a decent wedge of lemon. Without the lemon, it’s just not a gin and tonic. Cheese Canapes

This dish is kind of like an alternative cheese plate, a cross between cheese tapas, and cheese and crackers. As it’s summer, there is a huge array of delicious ripe fruit out there, so I decided to pair (pear!) them with some of my favourite summer cheese. This cheese plate looks so impressive, but only takes minutes to make and works great as canapés with a glass of sparkling wine or champagne. The cool thing about this dish is that you can mix and match as you like. I sliced up some fruit, a selection of herbs, and some cheese. Then I just tasted and figured out what worked well together. Beetroot, Pear, Feta and Pistachio Salad

Back to simpler fare this week with another summer salad to test your taste buds. I got the idea for the beetroot and feta salad from this great blog called Taste Food.  However, I made a few adjustments. I love fruit in salads as it always entices me to eat more green leaves, when I add some sweetness in the form of fruit. Pears work so well with cheese and nuts but I was unsure how it would go with beetroot. Surprisingly beetroot and pear taste great together. The creamy, slightly acidic cheese offsets the earthiness of the beet and the sweetness of the juicy pear. The mild white balsamic dressing brings them all together and the pistachios add a great nutty texture. Try it and see what you think? Continue Reading…
