Pecan, Apple and Whiskey Tartlets

Pecan pie is one of my all time favourite desserts. We sampled a lot of delicious pecan pies when we were in America recently, it’s the kind of dessert I can never get enough of. I wanted to make my own pecan pie this week to use up my delicious stash of special pecans that I brought home from “We’re Nuts” near Vienna, Georgia. In America they say Pee-CON, in Ireland we say PEE-can, I say vee-EHN-uh, they say vy-ENN-uh. I love all the different words and pronunciations for food they have. Whoever knew a turnip is called a rutabaga! Orange and Fennel Salad

This week it’s all about celebrating the summer. We’ve been having a pretty miserable summer here in Ireland so far; but I decided to celebrate the fact that it is getting a bit brighter with a sumptuous summer salad. This salad is so refreshing with ripe juicy orange segments, peppery leaves, a hint of nuttiness and a well balanced dressing. It’s my new favourite summertime snack. This dish is inspired by a salad that we ate in Rustic Stone on a rare sunny evening in Dublin. I didn’t use all the components in their recipe so I kind of formulated my own version.

Yes Pecan!

I love sweet, nutty buttery pecan pie so much. This recipe is made even more scrumptious with the addition of warming rum.
