Rainbow Cookies

I promise these are the last biscuits for a while. I am going to turn into a biscuit if not! The weather has been spectacularly drizzly in Ireland so far this summer. I wore a polo neck and winter boots the other day. It is turning into yet another Irish summer – rain with intermittent showers. When the weather is like this, it’s hard to drag yourself out of the slump. So, to cheer myself up I made these extremely bright and colourful rainbow cookies. How can you resist them! I especially like the fact that they are lying on a blue table cloth, so it looks like a glimpse of blue sky. Hope these rainbow cookies cheer you up, wherever you may be.

These biscuits are in part inspired by the man who coined the phrase ‘Whoa! It’s a double rainbow’. The Internet creates the most unlikely heroes. It’s hard to know exactly what drew millions of viewers to this odd little video, but it sure did capture the imagination.

Ingredients

  • 3 oz of white flour
  • 2 oz of butter
  • 1 oz of castor sugar
  • A little extra flour for rolling

Marzipan Rainbows

  • 5oz of plain white maripan
  • Few drops each of red, orange, yellow, green, blue and purple marzipan.
  • White icing (I used a white icing pen)

Note* In some good baking shops, it is possible to buy little bags of different coloured marzipan, which might save you some time.

Method

This recipe makes about 10 biscuits, depending on size.
Sieve the flour into a large bowl. Rub the butter into the flour, until it ressembles breadcrumbs. Stir in the sugar with a spoon. Gather the crumbs together to form a dough. Wrap the dough  in Clingfilm and leave in the fridge for half an hour.

Meanwhile preheat the oven to 180 degrees Celsius. Line a baking sheet with greaseproof paper. Once the biscuit dough has cooled for 30 minutes, remove the Clingfilm and place the dough on a floured surface. Using a rolling pin, roll out the dough until it is 4mm thick. Cut the dough into shapes with a round cookie cutter. Place the biscuits on the baking sheet and cook for 10-15 minutes- until golden. Put the biscuits on a wire rack until completely cool.

The rainbows are simply made with marzipan coloured with a few drops of food colouring. I used 1 oz of plain marzipan and two drops of colouring for each colour strand. I made a long strand of each colour, joined the strands together and then cut into small lengths. I curved into rainbow shapes with my finger and stuck them to the biscuits with a bit of white icing.
