Lemon Curd Yoghurt

Last week was my first foray in the yoghurt making business. And I have to say I was a little sceptical to begin with. The yoghurt making contraption arrived via mail order and looked disappointedly low tech! It was basically a plastic flask with a plastic jar that fit inside. Hmmm. Anyway, undeterred I went off and purchased my milk, milk powder and natural yoghurt! Hang on, you need yoghurt to make yoghurt??? Yes, I discovered you do indeed need yoghurt, however you only need two tiny teaspoons of it to make a huge two litre flask of yoghurt and you can use your own homemade yoghurt as a starter for your next batch. Making yoghurt is relatively straight forward though it does take a bit of time to make (8 hours of waiting to be precise.) However, if you make it in the evening, and leave overnight it will be ready for use the next day. (Bit warm for breakfast, need to cool a bit before eating). The yoghurt I made was so creamy and silky and tasted less acidic than some shop bought natural yoghurt. I added a dollop of home-made lemon to curd to mine which made this a really creamy, zingy and refreshing dessert. Continue Reading…

Love a bit of baklava!

You may have noticed I got a new camera! So hopefully my photos will begin to look a little better. I got a bit carried away with this one and went rooting through my cupboards trying to find Middle Eastern style props. Hope it looks suitably exotic and makes you think of far off places as opposed to Dublin 16. Baklava is basically lots of thin filo pastry layered with chopped nuts and spices, then drenched with honey syrup.  It’s crunchy, nutty and it’s a really nice alternative dessert . I like it served with creamy vanilla ice-cream and a strong dark bitter coffee.  I based this recipe on Rachel Allen’s recipe but made a few tweaks.  I have eaten some great baklava in my time, but I’ve also had some really sickly sweet versions that would melt your teeth. So I was interested in making one for myself. This recipe worked out really well and though it seems complicated, it’s not at all and it’s actually kind of therapeutic to make. Continue Reading…

Creamy custard tarts

Warning! These tarts are ridiculously easy to make and highly addictive. Stop reading now, if you, like me, have no willpower. These creamy custardy tarts are taken from a recipe by Bill Granger. They are amazing with a little apple sauce and crème fraiche on the side. I first had these tarts on holiday in Portugal and couldn’t get enough of them. I always thought they would be really fiddly to make, but it turns out, they are a piece of cake.

Yes Pecan!

I love sweet, nutty buttery pecan pie so much. This recipe is made even more scrumptious with the addition of warming rum. Irish Chocolate Mousse with Ginger Biscuits

This recipe is a small homage to St Patrick’s Day. The decadent chocolate mousse is laced with Irish whiskey and the coffee cream on top makes it taste like an Irish coffee. Banoffee coffee cream biscuits

I love banoffee, I love coffee and I love making biscuits, so I decided to combine these three loves into a wonderful dessert. The problem with a big banoffee pie is that you need a few people to eat the whole thing, otherwise you may feel a tad guilty eating the whole big pie yourself!  So, I came up with the banoffee coffee cream biscuit. Sounds like a bit of a mouthful! The great thing about these little biscuits is that you can keep all the ingredients separate and then assemble anytime you feel like a tasty indulgent snack.
