I love sweet, nutty buttery pecan pie so much. This recipe is made even more scrumptious with the addition of warming rum. This dish is not exactly low in calories,..but I did find out that pecans are one of the healthiest nuts around….so you definitely need some pecan pie in your life.
This recipe is kind of a combination of an omelette, a pancake and a quesadilla. It’s a really nice tasty snack and you can fill the omelettes with whatever cheese, meat, veg you have leftover in your fridge. It would also work really well with something like a smoked salmon, crème fraiche and spinach filling. This is a great brunch or tea-time treat.
I’m not the biggest cocktail fan, as I find most cocktails too sweet, but I love a raspberry mule as it’s refreshingly tart. You can make a raspberry mule extra icy with frozen raspberries. You can also make it extra healthy by omitting the vodka!
