Dutch Baby with Apple

Dutch Baby or a German pancake is just like a giant Yorkshire pudding baked in a skillet. It’s made with pancake batter, and puffs up and get wonderfully crisp when baked in a hot oven. It doesn’t take long to make, and is best eaten, piping hot straight from the oven (you won’t be able to stop yourself anyway, just be careful and eat it with copious amounts of vanilla ice-cream).

This is another one skillet wonder dish that is perfect for brunch or as quick dessert. To this simple pancake recipe, I have added some apples, caramelized in maple syrup, salty butter, and orange zest. You could also add some Cointreau or Brandy if you are feeling bold. The combination of soft maple flavored apples and crispy batter is divine.

In fact all this this crispy wonder needs is a spoon, a scoopful of ice-cream, and you. If you want to be fancy, you can turn the Dutch Baby out onto a serving plate, and serve it in wedges. Or you could just serve yourself giant spoonful’s straight from the skillet. Either way this Dutch Baby with apple is the perfect indulgence you can enjoy any time of the day.

Ingredients

• 20g of salted butter
• 120g of peeled and sliced apples (about 2 medium apples)
• 60ml of maple syrup
• Zest of half an orange
• 1 pinch of ginger powder (optional)
• 3 eggs, beaten
• 150ml of milk
• 110g of flour
• Pinch of salt
• 1 tablespoon of confectioners’ sugar/ icing sugar

Method

1. Preheat oven to 400 F/ 200 C.
2. Melt the butter in a 10 inch oven proof skillet over a medium heat.
3. Add the apple slices and cook until soft and golden on each side– about 3-5 minutes
4. Add the maple syrup, ginger powder and cook for a further 3 minutes. Take off the heat.
5. In a food processor beat together the eggs, milk, flour and salt until the batter is smooth and lump free.
6. Pour the batter over the apple mixture.
7. Bake in the oven for about 20 minutes, until puffed up and golden.
8. Dust with confectioners’ sugar and serve straight away. *note you can turn the pancake out onto a large serving platter and serve with the apples on top for a nicer presentation.
