Do you ever have that moment of panic when you realize you have nothing for dessert and you’ve friends coming for dinner? I sometimes get so caught up making the main course that I have no time left to make dessert. Rather than rush out and buy a dessert though, there are plenty of things you can whip up in minutes to create a wonderful home-made dessert.
Butterscotch sauce is my go- to desert option when I am short on time. I have never come across anyone who doesn’t drool over butterscotch sauce. It’s buttery, gooey, sweet, and sticky and makes any dessert decadent. You can add it to cake, ice-cream, or just eat it on its own with a spoon (just kidding 🙂 … no really). This recipe is one you need to add to your arsenal. It takes minutes to make, and will make your dessert memorable. The recipe below is for a butterscotch sauce which is served warm over some ice-cream, fresh banana, with cookie crumbs and a cherry on top.
Ingredients
- 50g of butter
- 75g of brown sugar
- 50g of white sugar
- 150g of golden syrup (If you live in the US, you can get this in the UK section of your supermarket) or Amazon Grocery
- 100ml of cream
- ¼ teaspoon of vanilla extract
Method
- Put the butter, both sugars and syrup in a medium-sized saucepan, over a medium heat.
- Heat until the butter has melted and the sugar has dissolved.
- Reduce the heat to low and add the cream and vanilla extract.
- Stir for 2 – 3 minutes until the sauce is smooth and glossy.
- Store in a screw top jar in the fridge. It will keep for about 2 weeks.
Sundae
For the sundae, serve the hot butterscotch sauce with two scoops of vanilla ice-cream, some sliced banana, some crushed graham crackers (digestive biscuits) and a maraschino cherry.
