Simple and tasty food.
I had been craving some hobnob biscuits ever since I saw them in the British section of our local supermarket. Having been imported they were pretty expensive, so I couldn’t justify paying that much when I could probably make something similar at home. So, I left the supermarket armed with some oats, butter and flour determined to make my own hobnob biscuits.
It’s probably a little too early to think about barbecuing, but the sun is shining today and this recipe always excites me about the summer. I normally make these turkey koftas on a griddle pan in the kitchen, but these spicy koftas are also delicious grilled on a barbecue.
This coming Monday is St. Patrick’s Day and I thought I would mark the occasion with something ‘not’ traditionally Irish. Supermarkets over here in Washington are fully stocked with huge cuts of corned beef wrapped in packaging emblazoned with smiling leprechauns.
Sticky toffee pudding is something I’ve become really fond of recently. It’s a very classic British dessert, that can be steamed or baked. This pudding is made with a basic cake batter and dates. Dates are not something you would normally associate with decadent desserts, but trust me it works.
A couple of years ago when we still lived in Ireland, we took a trip to Carlingford Lough, a small seaside town near the Northern Irish boarder. Carlingford is a really pretty scenic place to visit and we went kayaking and stayed the night in a local hotel.
