Baked Apples with Cranberry, Orange and Nuts

The winter chill has truly set in. Cold frosty mornings and short dark evenings are the order of the day. This baked apple dessert is a great winter warmer. It’s quick and easy to make, and all those aromatic spices will give your kitchen a lovely Christmasy aroma. I cannot believe I just said the word Christmas and it’s only November! This is a real feel good dessert however, cheap and easy to make, and dare I say it, healthy. Smoked Mackerel Salad

I love smoked mackerel. It’s such a great fish, readily available and with the added bonus of being very good for you. I think some people find its flavour a bit too strong, so I created this salad which I think balances out the strong fishy flavour with some other great tastes. It’s best to prepare all the elements first and then assemble just before serving so that everything stays crunchy and fresh. I used segments of orange, but this salad would work equally well with slivers of grapefruit. The citrus fruit cuts right through the oily fish. The whole toasted almonds bring a lovely crunch and sweetness. Radishes and rocket offer a peppery bite and the honey and lemon dressing bring all the flavours together. The melba toast is for an extra bit of crispiness and a chance to make yourself some little canapés. If you don’t like smoked mackerel this salad might just convince you otherwise. Cherry and Almond Muffins

I can’t get enough of fresh cherries this summer. And ever since I got my new cherry pitter, there really is no stopping me. This cherry and almond muffin recipe is so simple to make. In fact they were ready to come out of the oven by the time I had washed up all the dirty dishes. Then, I got to sit down and enjoy these warm nutty buttery cherry muffins with dollop of crème fraiche and a nice cup of tea. Sometimes the simplest things in life really are the best. I Heart Bakewell Tart

As kids we had a childminder called Mary and she was a great cook. Her bakewell tarts were the stuff of legend. I could never look, let alone eat, shop bought bakewell tarts because none of them would ever taste as amazing as Mary’s. There was something about Mary’s tarts! I loved the crispy lattice pastry she layered on top and the vibrant red jam oozing around the edges. I adored the almondy smell that permeated the whole house when she baked. I used to think that her bakewell looked like the kind of thing that the Queen of Hearts in Alice in Wonderland would eat. Continue Reading…

Adventures in Salty Almond Ice-cream

Blogging about food gives you a whole new awareness of other food blogs out there. Now that I read so many food blogs, I feel a lot more tuned into food from all over the world. The downside though is some of the blogs are so amazing, that I get blog envy :-(. But then you get back in the kitchen and take inspiration from some of these great blogs. I am regular reader and fan of the The Kitchn and my mouth literally watered when they posted a recipe for salted almond ice-cream last week. I am a sucker for salty sweet ice-cream with salty caramel ice-cream being my absolute favourite. Maybe the reason I like salty sweet ice-cream is because I have fond memories of eating ice-cream on the beach and maybe some of that salty sea water tainted the flavour. Continue Reading…
