Lemon Posset

Sometimes, there really is not enough hours in the day. I often find it hard to make time to make dessert. Right now, I have only two more sleeps until I go to Seattle. I still seem to have quiet a lot of things to do, and am short on both time and cooking equipment! I’m really looking forward to having all my kitcheny bits back. This lemon posset was a dream to make, requiring only four ingredients and no special tools. More …

Jellies

As the evenings are getting that bit darker and pumpkins have started appearing in the supermarket, it got me thinking about Halloween and trick-or-treating. I love jellies and sweets, but sometimes you have to wonder what actually goes into these colourful jems- emulsifiers, weird E numbers, and lots of other unpronouncables. So, I decided to make some of my own home-made jellies. At least that way I would know exactly what I am eating. More …

Mary Berry’s Tarte Au Citron

There’s something about Mary Berry. She’s the kind of cook that stands the test of time and produces recipes that can always be relied on. My mother’s favourite cookbook at home was the old Hamlyn cookbook and Mary Berry was one of the books contributing authors. Mary’s recipes were the ones we always used, her tarts, cakes and pies were always the crispest, the lightest and the tastiest. On the inside cover of the old Hamlyn cookbook there is a black and white photo of Mary as a young cook, she was quite a stunner in her day and still looks great. Mary’s career continues to thrive and her talent and charisma have wowed a whole new generation of bakers on the Great British Bake off. Mary Berry is somewhat of a baking icon and the kind of person you’d love to share a cup of tea and a slice of cake with.   More …

Mouth-watering Watermelon Salad

As this was a sunny Greek inspired dish I thought it only natural to try and capture some sunlight for the picture. As I have a normal nine-to-five job I only get time to do my blog outside office hours, so I have a very small window of opportunity to capture the light. So, I waited and I waited and I waited. By the time a few watery rays of sunshine appeared, I was almost falling down with hunger. When the photos were finally taken, I grabbed the closest available prop and tucked in with gleeful abandon. The evening sun was now warm and bright and had illuminated the entire balcony as I savoured this sweet and salty summer salad. This is my favourite kind of summer snack - light, fruity and fresh with a bite of salty olives and crispy pistachio nuts. Haloumi and Watermelon are a match made in heaven and the honey and lemon dressing really brings out all the flavours. This salad takes only minutes to make and is a perfect after work snack. More …
