Last time I was home in Ireland, my Dad made his famous pavlova with strawberries, and I made a lemon meringue pie. When I tasted the two desserts together I realized that strawberries, lemon curd and meringue are an amazingly good flavor combination. So, that is basically what inspired this recipe for zesty lemon curd, fresh strawberries, whipped cream and crispy meringues. Lemon curd is one of the best things you can have in your fridge. It’s so good in pies, mixed with whipped cream/ yogurt or even as an ice-cream topping. Its super simple to make, and is so wonderfully delicious. I have some leftover lemon curd in the fridge, and I am going to make a lemon curd ice-cream for my next recipe. These delicate meringues with the bright yellow curd and red strawberries all piled high on a pretty plate would make for a great summer dessert.

Lemon Curd
Make roughly 2 jars
Ingredients
• 50g of butter
• 100g of sugar
• Juice of 2 lemons (about 80 mls)
• Finely grated zest of 2 lemons
• 2 eggs and 1 egg yolk, beaten together
Method
1. Melt the butter in heavy bottomed saucepan over a low heat.
2. Once the butter has melted,add the sugar, lemon juice and zest.
3. Cook gently for a minute or two.
4. Next, add the well beaten eggs.
5. Keep stirring the mixture over a low heat until the curd starts to thicken and coats the back of the spoon.
6. Then, take the curd off the heat and allow it to cool.
7. As it cools, it will thicken some more.
8. Once cool, put the curd in sterilized jars, then seal and store in the fridge until ready to use.
