Last time I was home in Ireland, my Dad made his famous pavlova with strawberries, and I made a lemon meringue pie. When I tasted the two desserts together I realized that strawberries, lemon curd and meringue are an amazingly good flavor combination. So, that is basically what inspired this recipe for zesty lemon curd, fresh strawberries, whipped cream and crispy meringues.
This delicately spiced apple and almond cake is gluten-free and totally delicious. Almonds make a great base for a rich and nutty cake and the touch of ginger and cinnamon add a subtle spiced flavor.
It’s February once again which means that my blog is now three years old. In that time I have cooked almost 200 recipes for Stasty.com, published a gluten-free eBook and got a job that I love developing recipes for SousVide Supreme.
I’m very excited to announce that I have my published my very first ebook. Wohoo! After blogging for over two years, I decided to release a short book of gluten-free recipes. I don’t cook gluten-free all the time, but I am always amazed at how popular my gluten-free recipes are, so I dedicated some time to come up with some new gluten-free treats.
I sometimes find it hard to believe that we actually live in America now. Sometimes my accent slips and I find myself speaking like an American without even thinking. The other day I had to look twice at the word colour, as I felt the ‘u’ looked like it didn’t belong there.
I grew up in county Wexford in Ireland, which is well known for its delicious strawberries. Wexford strawberries are indescribably good. In fact I have never tasted a strawberry that tastes as good as a Wexford strawberry. When I was growing up, we had a small strawberry patch behind our house.
