Quick Creamy Salmon and Spinach Pasta

This pasta dish is so easy to make, and can be ready in the same amount of time that it takes to boil the pasta. I always make sure to have the ingredients for this dish on my weekly shopping list, as its a great dish to whip up at short notice. It really is more of an ingredients list rather than a recipe, as it takes very little effort or preparation to make. It’s simply some fresh buttered spinach, smoked salmon, crème fraiche and Parmesan. It’s reasonably healthy and totally delicious. If spinach is not your thing, you can replace it with broccoli, asparagus or even peas.

Ingredients

• 10g of butter
• 100g of fresh baby spinach, washed and dried
• salt and pepper to taste
• Pinch of nutmeg
• 60g of smoked salmon, cut into small bite-size pieces
• 1 heaped tablespoon of crème fraiche
• Cooked spaghetti for one (100g of uncooked spaghetti)
• Parmesan

Method

Put the pasta on to cook in a large saucepan of boiling water.
Next, heat the butter in a saucepan over a medium heat. Once the butter has melted add the spinach and cook for a few minutes until wilted and soft. Season with salt, pepper, and nutmeg.
Once the pasta is cooked, drain and stir in the cooked spinach. Add the smoked salmon, crème fraiche and stir to combine. Taste, and season with salt and pepper.
Serve straight away with some freshly grated Parmesan on top.
