It’s coming to the end of summer, and I can’t believe those balmy summer days are nearly over. I’m stocking up with as many great summer vegetables as I can, before the onslaught of kale and beetroot begins again 😉
Courgettes (Zucchini) seem to be particularly good this year, and I love cooking with them.With such abundance, I’ve been revisiting my favorite recipes and wanted to share this collection with you. The courgette fritters are particularly good as a snack with some piquant tomato relish. The courgette and cheese scones are what they call biscuits here, which is all very confusing, as at home, we call cookies ‘biscuits’. Anyway, these biscuits/ scones….whatever you like to call them are salty, cheesy and delicious. Scones here tend to be on the heavy side, but these scones are light and fluffy and great with lashings of home-made butter.The courgette chips are a really tasty snack and if you haven’t tried them yet….they really are more addictive than Pringles. So, if you happen to see some great local courgettes in the supermarket, be sure to try one or all of these recipes before those lovely courgettes are all gone.
