I am so thankful for root vegetables in the winter. Bright orange carrots, ruby red beets, wonderful yellow parsnips – without these brilliant roots, winter would be very dull. The great thing about root vegetables is that virtually any combination makes for a hearty winter soup.
Barbecue season has well and truly started, and I thought I would share these quick and tasty chicken skewers. The chicken is marinated in some garlic, ginger, lime juice, coriander and soy sauce. The marinade and smoky barbecue flavor make these chicken skewers taste succulent and delicious.
