Greetings from a greyish Seattle! I’m slowly beginning to get into the holiday spirit, and have just started to think about Christmas recipes. I decided to make some mincemeat first, as it takes about a week to mature and for all the lovely flavours to mingle. Just in case you are unfamiliar with mincemeat, it doesn’t contain any actual meat. I’ve had Georgia on my mind since visiting family in Atlanta for Thanksgiving. We took a road trip to Savannah and Charleston and discovered beautiful cotton fields, pecan trees and some amazing countryside. It couldn’t have been a more relaxing and enjoyable break. The food from the Low Country was for the most part great. It certainly was plentiful. The winter chill has truly set in. Cold frosty mornings and short dark evenings are the order of the day. This baked apple dessert is a great winter warmer. It’s quick and easy to make, and all those aromatic spices will give your kitchen a lovely Christmasy aroma. I cannot believe I just said the word Christmas and it’s only November! This is a real feel good dessert however, cheap and easy to make, and dare I say it, healthy.
