It’s the first day of spring, and I am celebrating with this wonderful white vegetable soup. It’s made with a few of my favorite things – celeriac, cauliflower, cumin and roasted garlic.
Thanksgiving is such a wonderful holiday and food is such a central part to the day – turkey, cranberry sauce, sweet potato pie, green bean casserole, mashed potatoes and pecan pie. I bet you are drooling now, just at the thought of it.
I never realized how important potatoes were to me until I moved to the other side of the world and realized potatoes just weren’t the same here as they are in Ireland. A couple of years ago when we still lived in Ireland, we took a trip to Carlingford Lough, a small seaside town near the Northern Irish boarder. Carlingford is a really pretty scenic place to visit and we went kayaking and stayed the night in a local hotel.
Maybe it’s the Irish in me, and our love of potatoes – but I think baked potatoes always make such a great winter meal. I usually turn to baked potatoes when I am tired and hungry and want something simple and delicious.
