Simple and tasty food.
Dining al desko in the office is often not as fun as it should be. It’s either a tired and limp sandwich or else it’s scalding hot leftovers in the microwave. I’m always trying to figure out ideas for work lunches that are simple, tasty and don’t require a trip to the microwave.
Like most people, I enjoy tortilla chips and guacamole with a beer. Tortilla chips are great and tasty, but not the most nutritional snack I know. So, I am always trying to think of a healthier snack to enjoy with a drink.
I love blood oranges – they look so dramatic when you cut through the flesh. It’s like an orange with added drama. You rarely see them though, so whenever I do, I always have to buy at least one.
I love roasting root vegetables as it brings out all their natural sweetness. This tarte tartin starts out with roasted root vegetables which are then set into a bed of balsamic caramel, topped with herbs and cheese and covered with pastry. The result is absolutely delicious.
Now that the days are closing in and that last bit of sun is squinting through the trees, it’s time to get ready for some hearty soups and stews. But just before I get the big heavy pots and casserole dishes out, I thought I would make one last, light, and simple tomato tart. Thanks to my OH’s work colleagues, we’ve recently been getting a lot of great home grown organic produce as gifts. Kevin Cooke gave us some lovely courgettes which, as I mentioned before, are not the OH’s favourite food. So, once again, I was faced with the challenge of glorifying this great vegetable. I created some delicious courgette, chive and cheese scones. The courgette in these scones make them deliciously moist and they’re a perfect lunch box filler.
